1/4 cup chopped sweet red pepper
1/4 cup chopped onion
2 tbsp finely chopped jalapeno pepper
3 garlic cloves minced
1 tbsp olive oil
2 cups cooked rice
1 cup frozen corn
1/2 tsp salt
1/4 tsp pepper
3 green onions, chopped
soy sauce, optional
in a large skillet, saute the red pepper, onion, jalapeno and garlic in oil until tender. Add the rice, corn, salt and pepper; cook and stir until heated through. sprinkle with green onions. Serve with soy sauce if desired
