TURKEY SCALLOPINI

6 turkey breast slices (about 1-1/2 pounds)
1/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg
2 tablespoons water
1 cup soft bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup butter or margarine
Minced fresh parsley

Pound turkey to 1/4-in. thickness. In a shallow bowl, combine flour, salt and pepper. In another bowl, beat egg and water. On a plate, combine the bread crumbs and Parmesan cheese. Dredge turkey in flour mixture, then dip in egg mixture and coat with crumbs. Melt butter in a skillet over medium-high heat. Cook turkey for 2-3 minutes on each side or until meat juices run clear and coating is golden brown. Sprinkle with parsley

Yield: 6 servings
