1 pound green beans
4 slices bacon, cut up
1 medium onion, chopped (about 1/2 cup)
1 tomato, chopped
1 clove garlic, finely chopped
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
Dash of pepper
Juice of 1/2 lemon (about 2 tablespoons)
Heat beans and 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling. Cook uncovered 5 minutes. Cover and cook until tender, 5 to 10 minutes. Rinse under cold water immediately; drain. Fry bacon in 1O-inch skillet until crisp; drain. Cook and stir onion in bacon fat until tender. Add tomato, garlic, oregano, salt and pepper; simmer uncovered 5 minutes. Stir in beans; heat until hot. Drizzle with lemon juice and garnish with bacon.
