1 large head red cabbage, coarsely shredded (about 10 cups)
1/3 cup water
1/3 cup vinegar
3 tablespoons sugar
1 teaspoons salt
1/8 teaspoon pepper
1 small onion, sliced
Heat all ingredients to boiling in Dutch oven, stirring occasionally; reduce heat. Cover and simmer until cabbage is tender. about 25 minutes.
6 servings.
Microwave Directions: Mix all ingredients in 3-quart microwavable casserole. Cover tightly and microwave on high (100%) 8 minutes; stir. Cover and microwave until cabbage is tender, 8 to 12 minutes longer.
