FRENCH-FRIED ONION RINGS

3 large Spanish or Bermuda onions
Vegetable oil
1/2 cup milk
1 egg
1/4 cup all-purpose flour*
1/2 teaspoon salt

Cut onions into 1/4-inch slices and separate into rings. Heat oil (1 inch) in 3-quart saucepan to 375 degrees: Beat remaining ingredients with hand beater until smooth. Dip each ring into batter, letting excess drip into bowl.
Fry a few onion rings at a time in hot oil turning once, until golden brown, about 2 minutes; drain.
4 servings.

* If using self-rising flour, omit salt.

Tip: To keep fried onion rings warm, place in 300 degree oven until ready to serve.
