HAM-ASPARAGUS ROLLS

Ham-Asparagus Rolls
6 thin slices cooked ham
24 cooked asparagus spears
1/2 cup tomato sauce
1 tablespoon butter
2 tablespoons flour
1 cup hot milk
1 egg yolk
Cayenne pepper and nutmeg to taste
1/2 cup Swiss cheese, in small cubes

Trim fat from ham slices. Place four asparagus spears at the end of each ham slice; roll up. Cover bottom of a flat 8" x 8" glass baking dish with tomato sauce. Place ham rolls seam¬down on sauce in pan. Heat butter, stir in flour, add milk; cook, stirring, until thickened. Remove from heat; cool slightly. Beat in egg yolk, season to taste; stir in half of-cheese. pour over ham in dish. Sprinkle with remaining cheese. Bake. at 350° about 20 minutes until browned.

Makes 6 servings.
