PENNE PASTA CASSEROLE

Serves: 6-8

pound lean ground beef or ground turkey
large onion, chopped
1 can (14.5 oz.) Hunt's' Diced Tomatoes with Basil, Garlic & Oregano
1 can (6 oz.) Hunt's' Tomato Paste
12 ounces (about 3-1/4 cups) uncooked penne pasta, prepare according to package directions
3 cups (12 oz.) shredded mozzarella cheese, divided

Cook ground beef and onion in a large skillet until beef is crumbled and no longer pink; drain. Stir in diced tomatoes and tomato paste and 1/2 cup water. Season to taste; heat through.

Coat a 13x9x2-inch baking dish with PAM No Stick Cooking Spray. Combine cooked pasta with meat-tomato mixture, and 2 cups mozzarella cheese. Pour into baking dish; top evenly with remaining cheese.
Bake uncovered in a preheated 350°F oven for 20 to 25 minutes or until heated through and cheese is melted
