Popovers
2 eggs
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt
Heat oven to 450 degrees: Generously grease six 6-ounce custard cups or 8 medium muffin cups, 2-1/2xl-1/4 inches. Beat eggs slightly; beat in flour, milk and salt just until smooth (do not overbeat).
Fill custard cups about 1/4 full; muffin cups about 3/4 full. Bake 20 minutes. Decrease oven temperature to 350 degrees; bake custard cups 20 minutes longer, muffin cups 15 minutes longer. Remove from cups immediately; serve hot.
6 or 8 popovers.
* Do not use self-rising flour in this recipe. Quick-mixing flour can be used.
