RIVER WEST'S SPINACH/BACON QUESADILLA

2 tortillas

slices pepper jack cheese

couple of thick slabs peppered bacon

1/8 each red/green bell peppers sliced

same for onion
handful of fresh spinach

blue cheese dressing

get ready by first layer pepper jack cheese on 1 tortilla

next fry up 2 slices of bacon per – drain on paper towel then crumble

add onion, bell pepper julienned and sauté in bacon drippings

add spinach for a few seconds until warm and wilted

remove from pan and spread hot on prepared cheese/tortilla

add other tortilla to the cover

in clean skillet or outside on grill place quesadillas

use low heat to brown tortilla until cheese is beginning to melt

cut in pie wedges and dip into blue cheese dressing with each bite.....

easy quick delicious....

serve with fresh strawberries and red grapes.....and glass of water with lime wedge or a mojoto
