2 Tbsp Mazola margarine
1/4 cup diced sweet red pepper
2 pkg (10 oz each) frozen Welsh - Rarebit, thawed
1/4 cup dry sherry
2-2/3 cups cooked seafood, such as small shrimp and/or flaked crab meat
6 oz (about 16) MUELLER'S jumbo shells, cooked, drained
1/4 cup milk
In 2-quart saucepan melt margarine over medium heat. Add pepper. Saute 1 to 2 minutes or until tender. Add rarebit and sherry. Stirring constantly, bring to boil and boil 1 minute. In medium bowl toss seafood with 1/2 cup sauce. Spoon 1 rounded tablespoon seafood mixture into each shell. Place in 11x7x2-inch baking dish. Stir milk into remaining sauce~ spoon over shells. Bake in 350°F oven 25 to 30 minutes or until bubbly.
Makes 4 to 6 servings.
