SERVES 4
2 tsp oil
2 tsp dry rub barbecue seasoning (we used Weber)
One 12-oz beef skirt steak, cut crosswise into 3 pieces
1. Heat oil in large skillet over high heat. Rub barbecue seasoning
on steak. Add steak; cook 5 to 6 minutes, turning once, for medium¬rare. Let rest 2 minutes before slicing thinly against the grain.
