2 tablespoons shortening or vegetable oil
5 or 6 medium potatoes, pared and thinly sliced (about 4 cups)
1 large onion, thinly sliced
1-1/2 teaspoons salt
pepper
2 tablespoons margarine or butter
Heat shortening in 10-inch skillet until
Layer 1/3 each of potato and onion slices in skillet; sprinkle with 1/2 teaspoon salt
and dash of pepper. Repeat 2 times. Dot top layer with margarine. Cover and cook over
medium heat 20 minutes. Uncover and cook,
turning once, until potatoes are brown.
5 servings.
