4 cups water
1- 16-ounce package frozen French-fried potatoes
1-1/2 teaspoons salt .

4 hard-cooked eggs, chopped
1/2 cup sliced radishes
1/2 cup diced celery
2 tablespoons sliced green onion
2 tablespoons snipped parsley
1 cup mayonnaise or salad dressing
1 tablespoon vinegar

pour the 4 cups water into large saucepan; bring to full rolling boil.
Carefully drop frozen potatoes into water. Remove from heat immediately; cover and let stand 4 to 5 minutes. Drain potatoes at once; spread on paper toweling. Cut up any large pieces. Sprinkle potatoes with the salt; cool. In bowl combine eggs, radishes, celery, green onion, and snipped parsley. Add mayonnaise and vinegar. Add potatoes and toss mixture gently; chill. Garnish with parsley and
radish roses, if desired.
Makes 8 servings.
