GRILLED 8RUSHETTA

4 slices Italian bread, about 1/3 inch thick, cut from a 10 inch loaf
4 garlic cloves
olive oil
1 small onion, minced
4 slices ham or smoked turkey
1 teaspoon thyme
1 10 oz bag fresh spinach
4 roma tomatoes, diced

Heat Stove Top Grill to high heat. Place bread slices on grill and and toast until each side is crisped and lightly browned. Put to side.

Cut 2 garlic cloves in half and rub one side of each slice of toast with garlic. Drizzle garlic- side with 1 teaspoon olive oil. Meanwhile, heat 1 teaspoon olive oil n a small skillet over medium heat. Add onions and sautee until tender. Place ham or turkey in sautee with thyme and cook for 10 minutes. Put 1 meat slice over garlic toast slices and spoon on tender onions. Wipe out skillet and return it to medium heat. Heat 1 teaspoon olive oil in skillet. Add remaining garlic cloves and cook until golden brown. Discard garlic, add spinach to the flavored oil and sautee until just wilted. Cover half the meat slices with spinach and the other half with tomatoes. Drizzle with olive oil and add salt and black pepper to taste.
