SALMON BRUSCHETTA

1 baguette, sliced 1/4 inch and toasted with olive oil
2 large cloves garlic
1/2 teaspoon salt
3 cups minced Roma tomatoes, seeds removed, or 1 (28-oz.) can petite diced tomatoes,
drained well
1/4 cup each: prepared pesto and shredded Parmesan cheese
2 Tablespoons extra virgin olive oil
1/2 teaspoon sugar
1/4 teaspoon pepper
1 (8-oz.) tub cream cheese with herbs
(7.1-oz. pouch or two 3.0-oz. pouches) Chicken of the Sea Premium Skinless & Boneless Pink Salmon
Italian parsley leaves or minced fresh parsley

In a bowl, mash garlic and salt into a paste. Add remaining ingredients except cream cheese, Chicken of the Sea Salmon and parsley; blend well. Spread 1/2 teaspoon cream cheese on baguette slices; top with bruschetta. Flake salmon over mixture. Garnish with parsley leaf. Serve immediately.
