8 cups fresh vegetables (a mixture of broccoli florets, cauliflower florets, carrot strips and zucchini slices)
1-1/2 cups low fat mayonnaise
1 cup shredded Cheddar
1/2 cup freshly grated Parmesan cheese
4 sliced green onions
2 tablespoons Dijon mustard
1/4 teaspoon cayenne pepper
3 tablespoons Italian seasoned bread crumbs
1. Heat oven to 350 F.
2. Microwave vegetables 8 minutes on high; drain. Arrange vegetables in 2-quart baking dish coated with cooking spray.
3. Mix mayonnaise, cheeses, onions, mustard and cayenne pepper. Spoon mixture over the vegetables. Sprinkle with bread crumbs.
4. Bake 20-25 minutes.
