Baby Zucchini and Avocado Tartar
2 firm avocados, finely diced
4 baby zucchini, finely diced2 tablespoons of lemon
juice
1 tablespoon olive oil, plus more for garnish
2 tablespoons basil, finely minced
1 tablespoon minced
chives, plus more for garnish
1 teaspoon agave sweetener
coarse salt to taste
ground pepper for garnish
toss all ingredients until well combined
divide into 4 serving and press into ring molds or
small containers.
garnish with chives, ground pepper and drizzle of
olive oil...
i server mine on top of any kind of fish prepared any
kind of way. delicious.
