CARROT BAKE

6 medium fresh carrots (about 1 pound), cut into 2x1/4 inch strips
1 medium head cauliflower, separated into flowerets(about 2 pounds)
1/4 cup margarine or butter
1 teaspoon salt
1/4 teaspoon ground nutmeg
Grated Parmesan cheese (optional)
Parsley

Heat oven to 375 degrees: Arrange carrots in ungreased rectangular baking dish,
12 x 7-1/2 x 2 inches. Layer cauliflowerets over carrots. Dot with margarine. Sprinkle with salt and nutmeg. Cover and bake until vegetables are tender, 50 to 55 minutes. Sprinkle with cheese; garnish with parsley.
