2 medium acorn squash
1/2 cup apple cider
1/4 cup packed brown sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground mace
Heat oven to 325 ~ Cut squash lengthwise into halves; remove seeds and fibers. Then cut crosswise into 1 inch slices. Spread slices in ungreased jelly roll pan, 15-1/2 x 10-1/2 x 1 inch. Pour apple cider on slices. Mix remaining ingredients; sprinkle over squash. Cover with aluminum foil and bake until tender, 45 to 60 minutes.
6 servings.
Microwave Directions: Prepare squash as directed above. Place sliced squash in square microwavable dish, 8 x 8 x 2 inches. Pour apple cider on slices. Cover tightly and microwave on high (100%) 6 minutes; rearrange. Mix remaining ingredients; sprinkle over squash. Cover tightly and microwave on high (100%) until squash is tender, 6 to 9 minutes longer. Let stand 3 minutes
