2 acorn squash (1 pound each)
2/3 cups graham cracker crumbs*
1/2 cup coarsely chopped pecans
1/2 cup margarine or butter, softened
3 tablespoons brown sugar
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
Heat oven to 400 degrees. Cut each squash into halves; remove seeds and fibers. Mix remaining ingredients. Spoon 1/4 of the crumb mixture into each squash half. Arrange squash halves in ungreased rectangular baking dish, 12 x 7-1/2 x 2 inches. Pour into baking dish. Cover; bake 35 to 40 minutes or until squash is tender.
4 servings.
*2/3 cup soda cracker crumbs can be substituted for the graham cracker crumbs.
