MEAT LOAF WITH MUSHROOM STUFFING

1 can (10 ounce) sliced mushrooms
1/2 cup onion (minced)
1/4 cup butter
4 cups fresh bread crumbs
1/4 teaspoon powdered thyme
1/4 cup minced parsley
2 1/2 pounds ground beef
2 eggs (slightly beaten)
1-1/2 teaspoons salt
1/8 teaspoon pepper
1/3 cup ketchup
1/3 cup mushroom broth

Drain mushroom, reserve broth. Saute the mushrooms and onion in butter until onion is transparent. Combine the mushrooms and onions with bread crumbs, thyme, and parsley. In a separate bowl mix together ground beef, eggs, salt, pepper, ketchup, and mushroom broth. Place half of the meat mixture into a loaf pan. Pack the stuffing on top and then the remainder of the meat. Bake at 375 degrees F. for 1-1/4 hours. Let stand for 15 minutes, drain juices, and serve.

This meat loaf recipe will serve 8.
