1/4 cup red wine vinegar
3/4 cup Extra Virgin Olive Oil
2 tsp, of one of the following: fresh chopped basil, minced scallions, fresh thyme or marjoram
Salt and freshly ground black pepper, to taste
For variations add to vinaigrette one or all of the following:
2 tsp small capers
1 tsp anchovy paste
1 tsp prepared mustard
Stir ingredients together and serve at room temperature, Prepare dressing fresh, as needed, to avoid refrigeration.
Oil and vinegar amounts are represented in classic Italian proportions. You may add more vinegar to taste. For a thicker dressing, pour vinegar into a bowl. Slowly trickle in olive oil, while beating with a fork or whisk,
Hint: For a garlic flavor, rub salad bowl with several cloves of peeled garlic.
