FRIED RICE

1/2 cup cooked finely chopped chicken, pork or ham
2 tablespoons chopped onion
4-oz. can (1/2 cup) mushroom stems and pieces, drained
2 tablespoons oil
3 cups cooked rice
1/4 cup soy sauce
2 eggs, well-beaten
1 tablespoon chopped fresh parsley or 2 tablespoons dry parsley
1/8 teaspoon pepper

In medium skillet, cook chicken, onion and mushrooms in oil until tender. Add rice and soy sauce. Cook over low heat 5 minutes, stirring occasionally with a fork. Add egg, parsley and pepper. Cook over low heat 5 minutes, stirring constantly. If desired, serve with additional soy sauce.
5 to 6 servings
