Stirring the potatoes halfway through the roasting time ensures that they'll brown and crisp up evenly
1/2 cup GREY POUPON DIJON, HONEY or Country Dijon Mustard
1/2 cup olive oil
3 pounds baking potatoes, cut into 1-1/2-inch cubes
2 medium onions, sliced
Chopped fresh parsley, for garnish
In bowl, combine mustard and oil. In large bowl, combine potatoes, onions and mustard mixture; toss to coat well.
Spread in 15-1/2x10-1/2x1-inch baking pan. Bake at 400°F for 45 to 50 minutes or until potatoes are tender and crispy, stirring once. Garnish with parsley.
