STUFFED CORNISH GAME HEN

1 cup hot water
1 tablespoon butter or margarine, cut in pieces
2 cups STOVE TOP~ Chicken Flavor Flexible Serving Stuffing Mix
1 large carrot, grated
1/4 teaspoon tarragon leaves
2 Cornish game hens (1-1/2 lb. each)
Oil

Stir water and butter in bowl to partially melt butter. Add stuffing mix, carrot and tarragon;
stir gently until water is absorbed. Spoon stuffing into cavities. truss hens, brush with oil and place breast up in baking pan or breast down in microwave dish.

OVEN: Roast at 350 degrees for 1 hour or until fork tender. Let stand 5 minutes.

MICROWAVE: Cook uncovered at HIGH 10 minutes. Turn breast side up and cook IO to 15 minutes longer until fork tender. Let stand 5 minutes. Makes 4 servings.
